Yummy recipe!!

Here's the recipe that we featured on the Community Connection TV show taping today for Comcast Channel 100, with our friends from Whole Foods Market!!


Southern Indian Chicken Curry

 

4 Tbsp corn oil

2 medium red onions, sliced

2 small jalapenos, halved lengthwise and seeded

2-3 cloves garlic, finely chopped

1 2-in piece of fresh ginger, thinly sliced

4-5 Tbsp lemon juice (from 2 lemons)

1 3/4 lb boneless chicken breast, cut into 1 1/2-inch pieces

1/2 teas cayenne pepper

1/2 teas ground coriander

1/2 teas ground cumin

1/4 teas mustard seeds

1 teas kosher salt

2 ripe yellow peaches, roughly chopped

1/2 c. canned unsweetened coconut milk

1/4 c. plain yogurt

Indian flatbread (nan) or pitas

 

* Heat 2 Tbsp oil in large skillet over medium heat.

* Place the onion in skillet and cook for 5 minutes.

* Add jalapenos, garlic, ginger & 4 Tbsp of the lemon juice and cook for 5 minutes more.

* Transfer the mixture to a bowl, set aside.

* Add the remaining 2 Tbsp of oil to skillet and raise heat to med-high.

* Add the chicken and stir fry until golden brown, about 8 minutes.

* Add the cayenne, coriander, cumin, mustard seeds & salt.

* Stir fry for 2 more minutes.

* Add the peaches, onion mixture and 1/2 cup water and simmer for 8 minutes.

* Stir in the coconut milk, reduce heat to med-low, and simmer gently for 2 minutes.

* Taste & add the remaining lemon juice if necessary.

 

Serve w/ the yogurt, flatbread/pitas or all if desired.

Grandma Pam's Twinkie Cake ... a meal in itself!
 
Strawberry Twinkie Cake
 
1 pkg (3.4 oz) instant vanilla pudding
1-3/4 Cup milk
1 cup chopped strawberries
20 Twinkies (2 boxes)                         
1 32-oz container of Cool Whip
Sliced strawberries (for top of cake)

Prepare pudding to pie-filling directions. Fold in chopped strawberries. Let stand 10 minutes. Arrange 10 twinkies in the bottom of a 9" springform pan, cutting to fit. Spread pudding mix on top of Twinkies. Top with remaining 10 Twinkies. Spread 1 cup Cool Whip on top of Twinkies. Refrigerate for 4 hours, or overnight.  Remove sides of pan, and frost remaining cake with Cool Whip. Top with sliced strawberries. Refrigerate until ready to serve. Serves 12-15.

Alternate fillings
 
Chocolate Peanut Butter
Substitute chocolate pudding, and fold in 1/2 cup peanut butter.  Top with chocolate and PB chips.

(274 calories per slice)
 
Banana-Caramel
Substitute Butterscotch pudding, fold in 2 chopped bananas. Press 2 cups toasted coconut onto sides of frosted cake, and drizzle top with 2 TBS caramel sundae topping.

(262 calories per slice)
